Instructions:

  1. Sauté the Aromatics:
    • Heat the olive oil in a large saucepan over medium heat.
    • Add the chopped onion and minced garlic, sautéing for about 5 minutes until soft and fragrant.
  2. Cook the Peas:
    • Add the green peas and vegetable broth to the pot.
    • Bring to a boil, then reduce the heat and let it simmer for 10–15 minutes, or until the peas are tender.
  3. Blend the Soup:
    • Using an immersion blender, puree the soup until smooth. (Alternatively, carefully transfer to a blender in batches.)
