Instructions:
- Sauté the Aromatics:
- Heat the olive oil in a large saucepan over medium heat.
- Add the chopped onion and minced garlic, sautéing for about 5 minutes until soft and fragrant.
- Cook the Peas:
- Add the green peas and vegetable broth to the pot.
- Bring to a boil, then reduce the heat and let it simmer for 10–15 minutes, or until the peas are tender.
- Blend the Soup:
- Using an immersion blender, puree the soup until smooth. (Alternatively, carefully transfer to a blender in batches.)
- Add Freshness & Seasoning:
- Stir in the chopped mint leaves.
- Season with salt, pepper, and a squeeze of lemon juice (if using) for extra freshness.
- Serve & Garnish:
- Ladle the soup into bowls and garnish with a fresh mint leaf.
- For extra creaminess, swirl in a little plant-based cream or yogurt just before serving.
