Instructions:
- Preheat the oven or air fryer:
- Oven: Preheat to 375°F (190°C).
- Air Fryer: Preheat to 350°F (175°C).
- Sauté the zucchini:
- Heat olive oil in an oven-safe skillet (or air fryer-safe dish) over medium heat.
- Add the zucchini slices and cook for 2-3 minutes until slightly tender.
- Stir in the minced garlic and cook for another minute.
- Prepare the egg mixture:
- In a large bowl, whisk together the eggs, milk, dried oregano, salt, and black pepper.
- Stir in the grated Parmesan cheese and half of the feta cheese.

- Pour the egg mixture evenly over the sautéed zucchini in the skillet or dish.
- Arrange the cherry tomato halves on top and sprinkle with the remaining feta cheese.
- Cook the frittata:
- Oven: Bake for 20-25 minutes, or until the center is set and the top is golden.
- Air Fryer: Cook at 350°F (175°C) for 12-15 minutes, checking for doneness.
- Garnish and serve:
- Let the frittata cool for a few minutes.
- Sprinkle with freshly chopped parsley, slice, and serve warm.
