Instructions
1. Prepare the Vegetables:
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the zucchini, bell peppers, red onion, cherry tomatoes, and garlic with olive oil, oregano, thyme, paprika, salt, and black pepper until evenly coated.
- Spread the vegetables in a single layer on a lined baking dish.
2. Prepare the Cod:
- Pat the cod fillets dry with a paper towel. Drizzle lightly with olive oil and lemon juice, then season with a pinch of salt, pepper, and red pepper flakes (if using).
- Place the cod fillets on top of the bed of vegetables in the baking dish.
3. Bake the Cod & Vegetables:
- Bake in the preheated oven for 20-25 minutes, or until the cod is opaque and flakes easily with a fork.
- Halfway through baking, baste the cod with the juices from the dish to keep it moist.
4. Prepare the Creamy Sauce:
- While the cod is baking, whisk together the Greek yogurt, tahini, lemon juice, garlic, olive oil, salt, cumin, and fresh dill in a small bowl until smooth. Taste and adjust seasoning as needed.
5. Serve & Garnish:
- Once baked, drizzle the creamy Mediterranean sauce over the cod and vegetables.
- Garnish with chopped fresh parsley and serve with lemon wedges on the side.
- Pair with warm pita bread, quinoa, or couscous for a complete meal!
