These Mediterranean Salmon Patties are flavorful, tender, and packed with fresh herbs, lemon, and feta cheese. Perfect for a quick and healthy meal, served with a yogurt-dill sauce or a crisp salad.

Ingredients:

*(Makes 6-8 patties)*

  • 1 lb (450g) fresh salmon, skin removed, finely chopped (or canned salmon, drained)

  • 1/2 cup breadcrumbs (or almond flour for a gluten-free option)

  • 1/4 cup crumbled feta cheese

  • 1/4 cup finely chopped red onion

  • 1/4 cup chopped fresh parsley

  • 2 tbsp chopped fresh dill

  • 1 tbsp capers, drained & chopped (optional)

  • 1 egg, lightly beaten

  • 1 tbsp lemon zest

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1/2 tsp ground cumin

  • 1/2 tsp smoked paprika

  • Salt & pepper to taste

  • 2 tbsp olive oil (for frying)

For Serving (Optional):

  • Lemon wedges

  • Tzatziki or yogurt-dill sauce

  • Mixed greens or pita bread
