Mediterranean Mint & Feta Stuffed Flatbreads

Instructions:

  1. Prepare the Dough:

    • In a mixing bowl, combine the self-raising flour and Greek yogurt.

    • Knead until a smooth dough forms (about 3–4 minutes).

    • Cover with a damp cloth and let rest for 10 minutes.

  2. Make the Filling:

    • In a separate bowl, mix the crumbled feta, cream cheese, wilted spinach, minced garlic, chopped mint, mint sauce, and black pepper.

    • Stir until well combined.

  3. Assemble the Flatbreads:

    • Divide the dough into 4 equal portions and roll each into a ball.

    • On a lightly floured surface, roll out each ball into a thin round (about 12–15cm in diameter).

    • Spoon a quarter of the filling onto one half of each round, leaving a small border.

    • Fold the dough over the filling and press the edges firmly to seal (use a fork to crimp if needed).

  4. Cook the Flatbreads:

    • Heat olive oil in a non-stick pan over medium heat.

    • Cook each flatbread for 2–3 minutes per side, until golden brown and crisp.

    • Repeat with the remaining flatbreads, adding more oil if needed.

  5. Serve:

    • Enjoy warm with a side of Greek yogurt or a fresh Mediterranean salad.
