Instructions:

Prepare the Dough:

In a mixing bowl, combine the self-raising flour and Greek yogurt.

Knead until a smooth dough forms (about 3–4 minutes).

Cover with a damp cloth and let rest for 10 minutes.

Make the Filling:

In a separate bowl, mix the crumbled feta, cream cheese, wilted spinach, minced garlic, chopped mint, mint sauce, and black pepper.

Stir until well combined.

Assemble the Flatbreads:

Divide the dough into 4 equal portions and roll each into a ball.

On a lightly floured surface, roll out each ball into a thin round (about 12–15cm in diameter).

Spoon a quarter of the filling onto one half of each round, leaving a small border.

Fold the dough over the filling and press the edges firmly to seal (use a fork to crimp if needed).

Cook the Flatbreads:

Heat olive oil in a non-stick pan over medium heat.

Cook each flatbread for 2–3 minutes per side, until golden brown and crisp.

Repeat with the remaining flatbreads, adding more oil if needed.

Enjoy warm with a side of Greek yogurt or a fresh Mediterranean salad.
