Instructions

  1. Prep the Oven & Pan:
    • Preheat oven to 375°F (190°C).
    • Lightly grease a 13×9-inch quarter sheet pan with nonstick spray.
  2. Make the Crust:
    • In a bowl, combine sausage, cream cheese, almond flour, coconut flour, mozzarella, Parmesan, and eggs. Mix until fully incorporated.
    • Press the mixture evenly into the pan, forming a slight edge for the crust.
    • Chill (if needed): If the dough is too soft, refrigerate for 30 minutes to firm up.
  3. Bake the Crust:
    • Bake for 12 minutes, rotating the pan halfway for even cooking.
  4. Prepare Toppings:
    • While the crust bakes, heat olive oil in a skillet over medium heat.
    • Sauté onion and bell pepper for 10 minutes until softened.
    • Add spinach and cook for 1 minute until wilted. Stir in garlic and remove from heat.
  5. Assemble & Bake Pizza:
    • Spread pizza sauce over the baked crust.
    • Top with the sautéed veggies, then sprinkle with cheddar and mozzarella.
    • Bake for 25 minutes or until cheese is bubbly and golden.
    • For extra browning, broil for 1–2 minutes (watch closely!).
  6. Serve:
    • Slice into 8 squares and enjoy hot!
