Instructions
- Prep the Oven & Pan:
- Preheat oven to 375°F (190°C).
- Lightly grease a 13×9-inch quarter sheet pan with nonstick spray.
- Make the Crust:
- In a bowl, combine sausage, cream cheese, almond flour, coconut flour, mozzarella, Parmesan, and eggs. Mix until fully incorporated.
- Press the mixture evenly into the pan, forming a slight edge for the crust.
- Chill (if needed): If the dough is too soft, refrigerate for 30 minutes to firm up.
- Bake the Crust:
- Bake for 12 minutes, rotating the pan halfway for even cooking.
- Prepare Toppings:
- While the crust bakes, heat olive oil in a skillet over medium heat.
- Sauté onion and bell pepper for 10 minutes until softened.
- Add spinach and cook for 1 minute until wilted. Stir in garlic and remove from heat.
- Assemble & Bake Pizza:
- Spread pizza sauce over the baked crust.
- Top with the sautéed veggies, then sprinkle with cheddar and mozzarella.
- Bake for 25 minutes or until cheese is bubbly and golden.
- For extra browning, broil for 1–2 minutes (watch closely!).
- Serve:
- Slice into 8 squares and enjoy hot!
