Instructions
1. Prep & Season the Fries
-
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
-
Soak cut potatoes in cold water for 15–30 min (removes starch for crispier fries). Pat completely dry.
-
Toss fries in a bowl with paprika, garlic powder, onion powder, cayenne, salt, pepper, and olive oil (if using).
-
Spread in a single layer on the baking sheet.
2. Bake the Fries
-
Bake for 25–30 min, flipping halfway, until golden and crispy.
-
For extra crispiness, broil 1–2 min (watch closely!).
3. Make the Sriracha Honey Sauce
-
While fries bake, whisk together mayo, Sriracha, honey, garlic powder, and paprika until smooth. Adjust spice/sweetness to taste.
4. Assemble the Voodoo Fries
-
Remove fries from oven and immediately top with:
-
Shredded cheddar (let melt slightly)
-
Crumbled bacon
-
Chopped green onions
-
-
Drizzle with sauce or serve on the side.
5. Serve & Enjoy!
-
Best served hot & crispy! Garnish with extra green onions if desired.
