Instructions

1. Prep & Season the Fries

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  • Soak cut potatoes in cold water for 15–30 min (removes starch for crispier fries). Pat completely dry.

  • Toss fries in a bowl with paprika, garlic powder, onion powder, cayenne, salt, pepper, and olive oil (if using).

  • Spread in a single layer on the baking sheet.

2. Bake the Fries

  • Bake for 25–30 min, flipping halfway, until golden and crispy.

  • For extra crispiness, broil 1–2 min (watch closely!).

3. Make the Sriracha Honey Sauce

  • While fries bake, whisk together mayo, Sriracha, honey, garlic powder, and paprika until smooth. Adjust spice/sweetness to taste.

4. Assemble the Voodoo Fries

  • Remove fries from oven and immediately top with:

    • Shredded cheddar (let melt slightly)

    • Crumbled bacon

    • Chopped green onions

  • Drizzle with sauce or serve on the side.

5. Serve & Enjoy!

  • Best served hot & crispy! Garnish with extra green onions if desired.

Pro Tips

🔥 Extra Crispy? Parboil fries for 3–5 min before seasoning and baking.
🌶 Adjust Heat: Add more cayenne or Sriracha for extra spice, or a pinch of red pepper flakes.
🧀 Customize: Try adding jalapeños, sour cream, or diced tomatoes.
🔄 Leftovers? Store in an airtight container for up to 2 days. Reheat in the oven or air fryer for best texture.

Enjoy the bold, spicy, cheesy goodness of these Louisiana Voodoo Fries! 🍟🔥
