- Prepare your pan – Preheat oven to 325°F (160°C). Use a non-stick cake pan (do not grease).
- Whip egg whites – Beat egg whites until frothy, then add cream of tartar and continue whipping until soft peaks form.
- Incorporate sweetener & flavors – Gradually add sugar substitute while whipping, then fold in vanilla & almond extracts.
- Mix dry ingredients – Sift together flour & salt, then mix with almond milk.
- Combine mixtures – Gently fold flour mixture into egg whites using a rubber spatula.
- Bake – Pour batter into prepared cake pan, bake for 25–30 minutes, until golden brown.
- Cool completely – Let rest 10 minutes, then transfer to a wire rack.
- Prepare topping – Lightly fold whipped topping, garnish with fresh berries.
- Serve responsibly – Slice into 12 portions, top, and enjoy!
