Ingredients:

  • 2¼ cups (270g) all-purpose flour (preferably organic, like King Arthur Flour)
  • 2 tsp (8g) baking powder
  • 1 (8oz/226g) package cream cheese (such as Philadelphia), softened
  • ½ cup (1 stick/113g) unsalted butter, softened
  • 1½ cups (300g) granulated sugar
  • 2 tbsp (12g) freshly grated lemon zest (from about 2 large lemons)
  • 1½ tbsp (22.5ml) freshly squeezed lemon juice
  • 1 tsp (5ml) pure vanilla extract
  • ⅛ tsp (a few drops) lemon oil (such as Boyajian) – omit for gluten-free version
  • ⅛ tsp natural yellow gel food coloring (such as Chefmaster)
  • 1 tsp (5g) kosher salt (or ¾ tsp table salt)
  • 1 large egg + 1 large egg yolk (about 71g without shells)
  • 1 cup (120g) confectioners’ sugar (for rolling & dusting)
