Lemon Blueberry Buttermilk Cake with Cream Cheese Frosting

For the Cake:

  • 1 ½ cups (180g) cake flour

  • 1 cup (200g) granulated sugar

  • 1 ½ tsp baking powder

  • ¼ tsp baking soda

  • ½ tsp salt

  • ½ cup (120ml) full-fat buttermilk, divided

  • ¼ cup (60ml) vegetable oil

  • 2 large eggs, room temperature

  • 1 tsp lemon extract

  • 2 tbsp fresh lemon juice

  • 1 tbsp fresh lemon zest (preferably organic)

  • ½ cup (113g) unsalted butter, softened

  • 1 cup (150g) fresh blueberries, tossed in 1 tbsp flour

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened

  • ½ cup (113g) unsalted butter, softened

  • 3 cups (360g) powdered sugar

  • 1 tsp vanilla extract

  • Pinch of salt
