Transfer the coating mix to a large plastic or paper bag.

Shake off excess egg, then place the chicken in the bag with the flour mixture.

Seal the bag and shake well until each piece is evenly coated.

Heat oil in a deep skillet or frying pan over medium heat.

Carefully add the chicken pieces, frying uncovered until golden brown.

Once browned, reduce heat to low, cover the pan, and continue cooking for about 15–20 minutes (or until fully cooked).

For extra crispiness, uncover and fry for an additional 2–3 minutes at the end.
