Instructions:
- Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
- Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
- Cut in butter: Add cold butter and use a pastry cutter or fingers to work it into the flour until the mixture resembles coarse crumbs.
- Add milk: Pour in milk and stir just until a shaggy dough forms (do not overmix).
- Knead lightly: Turn dough onto a floured surface and gently fold 2–3 times to bring it together. Press into a 15cm x 15cm (6″ x 6″) square, ~2.5cm (1″) thick.
- Cut biscuits: Use a sharp knife to slice into 12 equal squares (no twisting—straight cuts help them rise).
- Bake: Arrange biscuits on the tray, leaving space between. Bake for 12–15 minutes until golden. A toothpick should come out clean.
- Serve warm: Pull apart flaky layers and enjoy with butter, honey, or fried chicken!
Tips:
- For extra flakiness, freeze butter for 10 minutes before cutting in.
- Handle dough minimally to avoid tough biscuits.
