Instructions:
1. Prepare the Steak:
- Take the steak out of the fridge 20–30 minutes before cooking to bring it to room temperature.
- Pat it dry with a paper towel, then season generously with salt and pepper on both sides.
2. Cook the Steak:
- Heat a skillet (preferably cast iron) over medium-high heat and add the oil.
- Once the oil is shimmering, carefully place the steak in the pan.
- Sear for 3–5 minutes per side (depending on thickness and desired doneness).
- For medium-rare, aim for an internal temperature of 130–135°F (55–57°C).
- Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes.
3. Caramelize the Onions:
- In the same skillet, reduce heat to medium and add the sliced onions.
- Cook, stirring occasionally, for 15–20 minutes until soft and golden brown.
- Add butter in the last few minutes for extra richness.
4. Make the Fries:
- While the onions cook, prepare fries according to your preferred method:
- Deep-fry: Cook in hot oil (350°F/175°C) until golden and crispy.
- Air fry: Toss with a little oil and cook at 400°F (200°C) for 12–15 mins, shaking halfway.
- Oven bake: Spread on a baking sheet, drizzle with oil, and bake at 425°F (220°C) for 20–25 mins, flipping halfway.
- Season with salt immediately after cooking.
5. Serve:
- Slice the rested steak against the grain.
- Plate the steak, top with caramelized onions, and serve fries on the side.
- Garnish with fresh parsley and a dollop of garlic aioli or herbed butter, if desired.
