Instructions:
Prepare the Cake Batter:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
6. Fold in the crushed pineapple until evenly distributed throughout the batter.
Bake the Cake:
7. Divide the batter evenly between the prepared cake pans.
8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
9. Once baked, remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Prepare the Frosting:
10. In a large mixing bowl, whip the heavy cream until soft peaks form.
11. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
Assemble the Cake:
12. Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of whipped cream frosting on top.
13. Place the second cake layer on top and frost the top and sides of the entire cake with the remaining whipped cream frosting.
14. Garnish with fresh pineapple slices and toasted coconut flakes if desired.
Serve:
15. Slice the cake and serve chilled or at room temperature.
