Instructions:
- Marinate the Chicken:
- In a bowl, whisk together lemon juice, honey, olive oil, minced garlic, salt, pepper, and herbs.
- Place chicken in a resealable bag or shallow dish and pour the marinade over it, ensuring it’s fully coated.
- Let it marinate in the fridge for at least 30 minutes (or up to 4 hours for deeper flavor).
- Prepare the Potatoes:
- Preheat oven to 400°F (200°C).
- Toss halved potatoes with olive oil, salt, garlic powder, and paprika.
- Spread them on a baking sheet in a single layer.
- Roast the Chicken & Potatoes:
- Place marinated chicken in a separate baking dish (or on the same sheet, spaced apart).
- Roast chicken and potatoes together for 25-30 minutes, flipping potatoes halfway, until chicken is golden and cooked through (internal temp: 165°F / 75°C) and potatoes are crispy.
- Serve:
- Garnish chicken with lemon slices and fresh parsley.
- Serve hot with roasted potatoes and a side salad or steamed vegetables.
