Instructions:

  1. Marinate the Chicken:
    • In a bowl, whisk together lemon juice, honey, olive oil, minced garlic, salt, pepper, and herbs.
    • Place chicken in a resealable bag or shallow dish and pour the marinade over it, ensuring it’s fully coated.
    • Let it marinate in the fridge for at least 30 minutes (or up to 4 hours for deeper flavor).
  2. Prepare the Potatoes:
    • Preheat oven to 400°F (200°C).
    • Toss halved potatoes with olive oil, salt, garlic powder, and paprika.

    • Roast chicken and potatoes together for 25-30 minutes, flipping potatoes halfway, until chicken is golden and cooked through (internal temp: 165°F / 75°C) and potatoes are crispy.
