Instructions:
1. Marinate the Chicken
-
In a large bowl, whisk together eggs, evaporated milk, salt, pepper, paprika, garlic powder, onion powder, thyme, basil, and ginger powder.
-
Add the chicken pieces and coat well.
-
Cover and marinate for at least 2 hours (or overnight for best results) in the fridge.
2. Prepare the Coating Mixture
-
In a separate bowl, mix flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, oregano, and cayenne pepper.
3. Coat the Chicken
-
Take each marinated chicken piece and dredge it in the flour mixture, pressing firmly to ensure an even coat.
-
For extra crispiness, dip it back into the marinade, then coat again in the flour mixture (double coating).
-
Place the coated chicken on a tray and let it rest for 10-15 minutes (this helps the coating stick better).
4. Fry the Chicken
-
Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
-
Carefully add the chicken pieces (donât overcrowd the pan) and fry for 12-15 minutes, turning occasionally, until golden brown and crispy.
-
For larger pieces (like thighs), fry a little longer (up to 18 minutes) until fully cooked (internal temp should reach 165°F/74°C).
-
Drain on a wire rack or paper towels to remove excess oil.
5. Serve & Enjoy!
-
Let the chicken rest for 5 minutes before serving.
-
Best enjoyed with mashed potatoes, coleslaw, or fries!
