Homemade Chicken Pho (Vietnamese Noodle Soup)

Broth Ingredients:

  • 1 whole chicken (3–4 lbs)
  • 1 large onion, halved and sliced
  • 3–4 inches fresh ginger, sliced
  • 5–6 garlic cloves, peeled
  • 2 cinnamon sticks
  • 4–5 star anise pods
  • 4–5 whole cloves
  • 1 cardamom pod (optional)
  • 1 tbsp coriander seeds
  • 1 tbsp fennel seeds
  • 1 tsp black peppercorns
  • 2 tbsp fish sauce (plus more to taste)
  • 1 tbsp sugar
  • 1 tbsp salt
  • 12 cups water

For Serving:

  • 8 oz rice noodles (dried or fresh)
  • Shredded chicken from the broth
  • Thinly sliced onions
  • Fresh cilantro & mint leaves
  • Bean sprouts
  • Lime wedges
  • Sliced Thai bird chilies (optional)
  • Hoisin sauce & Sriracha (for dipping)
