Instructions
- Preheat oven to 425°F (220°C). Place a 10-inch cast iron skillet in the oven to heat.
- Blend batter – In a blender, mix eggs, milk, flour, salt, and 2 tbsp melted butter for 2 minutes until smooth.
- Prepare skillet – Pour remaining butter into the hot skillet, swirling to coat.
- Bake – Pour batter into the skillet, sprinkle with cheese, and bake for 20–25 minutes until puffed and golden.
- Garnish & serve – Top with fresh chives, serve warm!
