- Prepare the Base: In a large pot, combine the vegetable broth and chicken broth. Bring to a gentle simmer over medium heat.
- Sauté Aromatics: In a separate pan, sauté the diced onion and minced garlic until softened and fragrant, about 3-4 minutes. Add this mixture to the broth.
- Add Vegetables: Stir in the diced potatoes, carrots, zucchini, cabbage, and mushrooms. Let the soup simmer for about 10-15 minutes, or until the vegetables begin to soften.
- Incorporate Remaining Ingredients: Add the stewed tomatoes, corn, frozen spinach, Worcestershire sauce, garlic powder, onion powder, salt, pepper, table seasoning, and Tajin (if using). Stir well to combine.
- Simmer: Reduce the heat to low and let the soup simmer for another 20-25 minutes, or until all the vegetables are tender and the flavors have melded together.
- Adjust Seasoning: Taste and adjust salt, pepper, or other seasonings as needed.
- Serve: Ladle the soup into bowls and enjoy warm. Optional: garnish with fresh herbs or a sprinkle of Tajin for extra flavor.
