Instructions
Step 1: Prep the Beans
✔ Sort & rinse beans thoroughly. ✔ Add beans to a large pot with 8 cups of water, bring to a boil for 2 minutes. ✔ Remove from heat, cover & soak for 1 hour. Drain & rinse.
Step 2: Cook the Soup
✔ Return beans to the pot, add 6 cups water, onion, and ham. ✔ Simmer for 1½ to 2 hours, stirring occasionally, until beans are tender. ✔ Season with salt & pepper to taste.
Step 3: Serve & Enjoy!
✔ Garnish with green onions, serve hot!
Tips & Variations
✔ Use a ham bone for deeper flavor. ✔ Make it creamy – Blend a portion of the beans before serving. ✔ Add veggies – Try carrots, celery, or garlic for extra depth.
