Minestrone Recipe

- Olive Oil: About 2 tablespoons
- Vegetables:
- 1 onion, diced
- 3 cloves garlic, minced
- 2 stalks and the heart of a bunch of celery, diced
- 3 carrots, diced
- 3 medium Yukon gold potatoes, diced
- Fresh green beans, snipped and cut into ½ to 1-inch pieces (a couple handfuls)
- 1½ cups whole kernel corn
- 1 yellow squash (or zucchini), diced
- Canned Goods:
- 2 cans diced tomatoes
- 1 can cannellini beans
- Greens:
- Two big handfuls of fresh baby spinach
- Pasta:
- 1 cup Ditalini pasta
- Sauce:
- About a quart of red sauce (marinara, spaghetti sauce, or tomato sauce with herbs)
- Seasonings:
- 1 tablespoon dried Italian seasoning
- 2 bay leaves
- 2 sprigs thyme, leaves stripped into the soup
- 2 sprigs oregano, leaves stripped and minced
- About 20 grinds black pepper
- Optional: Diced frond of a bulb of fresh fennel, added at the end
