1️⃣ Marinate the Chicken
- In a large bowl, combine chicken with salt, pepper, paprika, vinegar, garlic cloves, and wine.
- Massage marinade into the chicken thoroughly.
- Cover and refrigerate for at least 1 hour, ideally overnight.
2️⃣ Prep the Potatoes
- Peel and wedge potatoes. Toss with olive oil, salt, and pepper.
- Arrange in a single layer on a baking tray.
3️⃣ Assemble & Bake
- Place marinated chicken over the potatoes.
- Pour remaining marinade over everything.
- Bake in a preheated oven at 220°C (430°F) for 1 hour, or until chicken is golden and cooked through.
4️⃣ Serve
- Let rest for a few minutes, then serve warm with pan juices spooned over the potatoes.
🔥 Tips & Variations
- Add sliced onions or bell peppers for extra depth
- Swap wine for lemon juice if preferred
- Use chicken drumsticks or bone-in thighs for best flavor
- For crispier skin, switch to grill mode for last 5 minutes
