Instructions:
1. Prep the Potatoes:
- Wash and cube the potatoes into 1-inch pieces.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add the potatoes, season with salt & pepper, and cook for 15-20 minutes, stirring occasionally, until golden and crispy. Remove and set aside.
2. Cook the Steak:
- Pat the steaks dry with a paper towel and season generously with salt & pepper.
- In the same skillet, heat 1 tbsp olive oil over high heat.
- Once hot, add the steaks and sear for 3-4 minutes per side (for medium-rare) or until desired doneness.
- Reduce heat to medium, add butter and minced garlic. Spoon the garlic butter over the steaks for 1-2 minutes for extra flavor.
3. Combine & Serve:
- Return the crispy potatoes to the skillet and toss with the garlic butter.
- Sprinkle with chopped parsley for freshness.
- Let the steak rest for 5 minutes, then slice and serve with the potatoes.
