Instructions:

1. Prep the Potatoes:

  • Wash and cube the potatoes into 1-inch pieces.
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add the potatoes, season with salt & pepper, and cook for 15-20 minutes, stirring occasionally, until golden and crispy. Remove and set aside.

2. Cook the Steak:

  • Pat the steaks dry with a paper towel and season generously with salt & pepper.
  • In the same skillet, heat 1 tbsp olive oil over high heat.
  • Once hot, add the steaks and sear for 3-4 minutes per side (for medium-rare) or until desired doneness.
  • Reduce heat to medium, add butter and minced garlic. Spoon the garlic butter over the steaks for 1-2 minutes for extra flavor.

3. Combine & Serve:

  • Return the crispy potatoes to the skillet and toss with the garlic butter.
  • Sprinkle with chopped parsley for freshness.
  • Let the steak rest for 5 minutes, then slice and serve with the potatoes.
