Instructions:
1. Prepare the Lobster Tails:
- Butterfly the lobster tails: Use kitchen shears to cut through the top shell lengthwise. Gently pull the meat upward, keeping it attached at the base, and rest it on top of the shell.
- Make the garlic butter sauce: In a bowl, mix melted butter, minced garlic, lemon juice, salt, and pepper.
- Brush the lobster: Generously coat the lobster meat with the garlic butter mixture.
2. Cook the Lobster Tails:
- Broil (Oven Method):
- Preheat the broiler on high.
- Place lobster tails on a baking sheet, shell-side down.
- Broil for 5-7 minutes until the meat is opaque and lightly browned.
- Grill (Optional):
- Preheat grill to medium-high.
- Grill lobster tails, shell-side down, for 6-8 minutes, basting with extra garlic butter.
3. Cook the Scallops:
- Pat dry scallops to ensure a good sear. Season with salt, pepper, and paprika (if using).
- Heat oil & butter in a skillet over medium-high heat. Once hot, add scallops in a single layer.
- Sear for 2-3 minutes per side until golden brown and just cooked through.
- Add garlic & lemon juice in the last minute, spooning butter over the scallops.
4. Serve:
- Plate the lobster and scallops together.
- Drizzle with remaining garlic butter sauce and garnish with fresh parsley.
- Serve with lemon wedges and crusty bread for soaking up the sauce.
