Instructions:

1. Prepare the Lobster Tails:

  • Butterfly the lobster tails: Use kitchen shears to cut through the top shell lengthwise. Gently pull the meat upward, keeping it attached at the base, and rest it on top of the shell.
  • Make the garlic butter sauce: In a bowl, mix melted butter, minced garlic, lemon juice, salt, and pepper.
  • Brush the lobster: Generously coat the lobster meat with the garlic butter mixture.

2. Cook the Lobster Tails:

  • Broil (Oven Method):
    • Preheat the broiler on high.
    • Place lobster tails on a baking sheet, shell-side down.
    • Broil for 5-7 minutes until the meat is opaque and lightly browned.
  • Grill (Optional):
    • Preheat grill to medium-high.
    • Grill lobster tails, shell-side down, for 6-8 minutes, basting with extra garlic butter.

3. Cook the Scallops:

  • Pat dry scallops to ensure a good sear. Season with salt, pepper, and paprika (if using).
  • Heat oil & butter in a skillet over medium-high heat. Once hot, add scallops in a single layer.
  • Sear for 2-3 minutes per side until golden brown and just cooked through.
  • Add garlic & lemon juice in the last minute, spooning butter over the scallops.

4. Serve:

  • Plate the lobster and scallops together.
  • Drizzle with remaining garlic butter sauce and garnish with fresh parsley.
  • Serve with lemon wedges and crusty bread for soaking up the sauce.
