✔ Cut ribs into manageable pieces, rinse & pat dry. ✔ Heat oil in a pot, sear ribs until browned on all sides. Set aside.
✔ In the same pot, sauté onion & garlic until fragrant.
✔ Stir in soy sauce, vinegar, sugar, calamansi juice, bay leaves, black pepper, & salt. ✔ Simmer for 3 minutes, stirring occasionally.
✔ Return ribs to the pot, pour in water & broth (if using). ✔ Bring to a gentle boil, then cover & reduce heat to low. ✔ Simmer for 1.5–2 hours until ribs are tender & sauce has thickened.
✔ Stir in ketchup or coconut milk for extra richness. ✔ Taste & adjust seasoning, let simmer for 10 more minutes. ✔ Serve hot with steamed rice & enjoy!
✔ Marinate ribs for at least 30 minutes before cooking. ✔ Grill before braising for a smokier taste. ✔ Simmer low & slow for tender meat.
