🥄 Instructions

1️⃣ Prepare the Crust:

  • Mix vanilla wafer crumbs with melted butter until combined.

  • Press firmly into the bottom of a *9-inch springform pan* coated with nonstick spray. Set aside.

2️⃣ Make the Filling:

  • In a saucepan, heat crushed pineapple and sugar over medium heat for 5 minutes, stirring occasionally.

  • In a small bowl, sprinkle gelatin over cold water; let sit 1 minute to bloom. Stir into the warm pineapple until dissolved.

  • Reduce heat to low. Add cream cheese cubes, stirring constantly until fully melted and smooth. Remove from heat and cool completely.

3️⃣ Combine & Chill:

  • Once cooled, fold in grapes, oranges, cherries, pecans, and whipped topping.

  • Pour mixture over the crust, smoothing the top with a spatula.

  • Cover with plastic wrap and refrigerate at least 6 hours (or overnight) to set.

4️⃣ Serve:

  • Release from the springform pan, slice, and garnish with extra fruit or wafer crumbs. Enjoy chilled!
