- Cut the sausage into slices.
- Add the meat, potatoes and onions to a large mixing bowl.
- Pour the olive oil over the mixture, and season with the cajun spice, paprika, as well as salt and pepper to taste. Toss to coat well.
- Spread the mixture into a single layer on a parchment lined baking sheet.
- Bake for 45 minutes, or until the potatoes are tender.
