Instructions:

  1. Prep: Preheat the oven to 180°C (360°F). Grease a 22cm (9-inch) round cake pan or line it with parchment paper.

  2. Mix the Batter:

    • In a blender, combine eggs, baking powder, powdered sugar, butter, potato starch, flour, salt, yogurt, and vanilla extract.

    • Blend on high speed for 3 minutes until smooth and creamy.

  3. Bake:

    • Pour the batter into the prepared pan, smoothing the top.

    • Bake for 40 minutes, or until golden and a toothpick inserted in the center comes out clean.

  4. Cool & Serve:

    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.

    • Once completely cooled, slice and enjoy your light, fluffy cloud cake!
