Instructions:

Prep: Preheat the oven to 180°C (360°F). Grease a 22cm (9-inch) round cake pan or line it with parchment paper.

Mix the Batter:

In a blender, combine eggs, baking powder, powdered sugar, butter, potato starch, flour, salt, yogurt, and vanilla extract.

Blend on high speed for 3 minutes until smooth and creamy.

Bake:

Pour the batter into the prepared pan, smoothing the top.

Bake for 40 minutes, or until golden and a toothpick inserted in the center comes out clean.

Cool & Serve:

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
