Filet Mignon with Sautéed Mushrooms & Red Wine Reduction

Ingredients

For the Filet Mignon:

  • 4 filet mignon steaks (6 oz each, 1.5″ thick)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 garlic cloves, smashed
  • 2 sprigs fresh rosemary or thyme (optional)
  • Kosher salt & freshly ground black pepper

For the Sautéed Mushrooms:

  • 2 tbsp unsalted butter
  • 1 lb cremini or button mushrooms, sliced
  • 1 garlic clove, minced
  • Salt & pepper to taste
  • 1 tbsp fresh parsley, chopped (garnish)

For the Red Wine Reduction:

  • 1 cup dry red wine (Cabernet Sauvignon, Merlot, or Pinot Noir)
  • ½ cup beef broth (preferably low-sodium)
  • 2 tbsp cold unsalted butter
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • Salt & pepper to taste
