Ingredients
For the Filet Mignon:
- 4 filet mignon steaks (6 oz each, 1.5″ thick)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 garlic cloves, smashed
- 2 sprigs fresh rosemary or thyme (optional)
- Kosher salt & freshly ground black pepper
For the Sautéed Mushrooms:
- 2 tbsp unsalted butter
- 1 lb cremini or button mushrooms, sliced
- 1 garlic clove, minced
- Salt & pepper to taste
- 1 tbsp fresh parsley, chopped (garnish)
For the Red Wine Reduction:
- 1 cup dry red wine (Cabernet Sauvignon, Merlot, or Pinot Noir)
- ½ cup beef broth (preferably low-sodium)
- 2 tbsp cold unsalted butter
- 1 tbsp fresh thyme (or 1 tsp dried)
- Salt & pepper to taste
