Directions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Cook the beef: In a skillet over medium heat, brown the ground beef, breaking it into crumbles. Drain excess fat.

  4. Mix filling: In a bowl, combine the beef mixture, black beans, and corn.

  5. Layer casserole:

    • Spread 1 cup crushed tortilla chips in the baking dish.

    • Top with the beef mixture, spreading evenly.

    • Sprinkle with 1 cup cheese.

    • Add remaining 1 cup chips, then the rest of the cheese.

    • Scatter black olives and green onions on top.

  6. Bake for 20–25 minutes until cheese is melted and bubbly.

  7. Garnish with cilantro (if using) and let cool 5 minutes before serving.
