Instructions:

  1. Sauté Sausage & Aromatics:

    • Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until lightly browned (3-4 mins).

    • Add diced onion and garlic, sauté for 2-3 mins until fragrant.

  2. Add Potatoes & Liquids:

    • Stir in diced potatoes, white beans, broth, diced tomatoes (with juices), smoked paprika, thyme, salt, and pepper.
