Instructions:

1. Cook the Lasagna Noodles:

  • Bring a large pot of salted water to a boil.
  • Cook the noodles according to package instructions until al dente.
  • Drain and lay them flat on a clean towel to cool.

2. Make the Filling:

In a large bowl, mix together:

  • Ricotta, 1 cup mozzarella, Parmesan, egg, spinach, garlic powder, onion powder, oregano, salt, and pepper until well combined.

3. Assemble the Rolls:

  • Preheat the oven to 375°F (190°C).
  • Spread a thin layer of marinara sauce in a 9×13-inch baking dish.
  • Lay out a lasagna noodle, spread 2-3 tbsp of filling along its length, then roll it up tightly.
  • Place seam-side down in the dish. Repeat with remaining noodles.

4. Top & Bake:

  • Pour the remaining marinara sauce over the rolls.
  • Sprinkle with the remaining 1 cup mozzarella.
  • Cover with foil and bake for 25 minutes.
  • Uncover and bake for 10-15 more minutes until bubbly and golden.

5. Serve & Enjoy!

  • Let cool slightly, then garnish with fresh basil (if using).
