Dairy-Free Creamy Veggie Soup
This plant-based soup is thick, comforting, and packed with flavor. A roux made with dairy-free butter and flour creates a smooth base, while nutritional yeast gives it a slight cheesy taste. 1 Tbsp olive oil
4 cloves garlic, minced
1 medium onion, diced
3 medium carrots, chopped
4 celery stalks, chopped
½ cup corn
1 cup peas
3 Tbsp nutritional yeast
4 cups vegetable broth
1/3 cup all-purpose or gluten-free flour
1/3 cup dairy-free butter
1 cup unsweetened dairy-free milk
1 tsp salt
1/2 tsp pepper
1/2 tsp fresh rosemary
1/2 tsp fresh oregano
1/2 tsp fresh thyme
1 cup chickpeas or white beans (optional)
