Instructions:
1. Prep the Potatoes
- Preheat oven to 400°F (200°C).
- Scrub potatoes clean (leave skins on for extra crispiness!).
- Slice carefully: Place a potato between two chopsticks or wooden spoons (to prevent cutting all the way through). Make thin slices, about ¼-inch apart.
2. Season & Butter Up
- In a bowl, mix melted butter, garlic, salt, pepper, paprika, and thyme.
- Brush generously over and between the potato slices.
3. Bake to Perfection
- Place potatoes on a parchment-lined baking sheet.
- Bake for 40 minutes, then brush with more butter.
- Sprinkle Parmesan (if using) and bake 10-15 more minutes until golden and crispy.
4. Serve & Enjoy!
- Garnish with fresh parsley.
- Serve hot with sour cream, ranch, or garlic aioli for dipping!
