Instructions:
- Prepare the Zucchini:
- Preheat your oven to 425°F (220°C).
- Wash and dry the zucchinis. Cut them into fry shapes, about ¼ inch thick.
- Set Up Breading Station:
- In one bowl, place the flour, garlic powder, onion powder, salt, and pepper.
- In a second bowl, beat the eggs.
- In a third bowl, combine the breadcrumbs and Parmesan cheese (if using).
- Bread the Zucchini:
- Dip each zucchini fry first into the flour mixture, shaking off any excess.
- Next, dip it into the beaten eggs, allowing any excess to drip off.
- Finally, coat the zucchini fry in the breadcrumb mixture, pressing gently to adhere.
- Bake:
- Place the breaded zucchini fries on a baking sheet lined with parchment paper. Make sure they are spaced out and not touching to ensure even baking.
- Lightly spray or drizzle the fries with cooking spray or olive oil.
- Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy. Flip the fries halfway through for even cooking.
- Serve:
- Remove from the oven and let cool for a couple of minutes. Serve warm with your favorite dipping sauce, such as marinara, ranch, or garlic aioli.
