Instructions:

  1. Prepare the Coating Mixture:
    In a shallow bowl, combine the self-rising flour, 1 tablespoon of kosher salt, Old Bay seasoning, and black pepper. Mix well and set aside.
  2. Heat the Oil:
    Pour vegetable oil into a Dutch oven or medium cast iron skillet, filling it about halfway. Heat the oil over medium-high heat until it reaches 375°F (190°C). Use a thermometer to monitor the temperature.
  3. Coat the Shrimp:
    Pat the shrimp dry with paper towels. Dip each shrimp into the flour mixture, ensuring it’s fully coated. Shake off any excess flour. Next, dip the shrimp into the yogurt, coating it evenly. Finally, dip it back into the flour mixture for a second coating. Shake gently to remove any loose flour.
  4. Fry the Shrimp:
    Working in batches to avoid overcrowding, carefully place the coated shrimp into the hot oil. Fry for 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to transfer the shrimp to a paper towel-lined tray to drain excess oil.
  5. Season and Maintain Oil Temperature:
    Lightly sprinkle the fried shrimp with additional salt if desired. Between batches, check the oil temperature and adjust the heat as needed to maintain a consistent temperature of 350-375°F (175-190°C).
  6. Keep Shrimp Warm:
    To keep the fried shrimp warm and crispy while cooking the remaining batches, place them on a baking sheet in an oven preheated to 200°F (95°C).
  7. Serve and Enjoy:
    Serve the crispy fried shrimp immediately with your favorite dipping sauce or as a delicious appetizer or main dish.
