Creamy Spinach & Mushroom Lasagna

A delicious and comforting lasagna filled with creamy ricotta, sautéed mushrooms, and fresh spinach. Perfect for a family dinner or special occasion!

Ingredients:

  • 12 lasagna noodles, cooked according to package instructions

  • 2 tablespoons olive oil

  • 2 cups mushrooms, sliced

  • 4 cups fresh spinach, chopped

  • 3 cups ricotta cheese

  • 1 egg

  • 2 cups shredded mozzarella cheese, divided

  • 2 cups marinara sauce (store-bought or homemade)

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

  • ¼ teaspoon nutmeg (optional)

  • ½ cup grated Parmesan cheese (optional, for topping)

Instructions:

1. Preheat Oven & Prepare Ingredients

  • Preheat oven to 375°F (190°C).

  • Cook lasagna noodles according to package instructions, drain, and set aside.

2. Sauté Mushrooms & Spinach

  • Heat olive oil in a large skillet over medium heat.

  • Add mushrooms and sauté for 4-5 minutes until softened.

  • Add chopped spinach and cook for 2-3 minutes until wilted. Remove from heat.

3. Prepare Ricotta Mixture

  • In a bowl, combine:

    • Ricotta cheese

    • 1 egg

    • 1 cup mozzarella cheese

    • Salt, pepper, garlic powder, and nutmeg (if using)

  • Mix well until smooth.

4. Assemble the Lasagna

  • In a 9×13-inch baking dish, spread ½ cup marinara sauce on the bottom.

  • Layer in this order:

    1. 4 lasagna noodles (slightly overlapping)

    2. ½ ricotta mixture

    3. ½ mushroom-spinach mixture

    4. ½ cup marinara sauce

    5. ½ cup mozzarella cheese

  • Repeat layers:

    1. 4 lasagna noodles

    2. Remaining ricotta mixture

    3. Remaining mushroom-spinach mixture

    4. ½ cup marinara sauce

    5. ½ cup mozzarella cheese

  • Top with the last 4 lasagna noodles, remaining ½ cup marinara sauce, and remaining ½ cup mozzarella cheese.

  • Sprinkle Parmesan cheese on top (optional).

5. Bake

  • Cover with aluminum foil and bake for 25 minutes.

  • Remove foil and bake for another 10-15 minutes until bubbly and golden.

6. Rest & Serve

  • Let lasagna rest for 10 minutes before slicing.

  • Serve warm and enjoy!
