Instructions
Step 1: Cook the Pasta
✔ Bring salted water to a boil, cook penne until al dente, drain, and reserve ½ cup pasta water.
Step 2: Cook the Chicken
✔ Heat olive oil in a skillet over medium heat. ✔ Season chicken breasts with salt & pepper, cook 5–6 minutes per side until golden brown. ✔ Transfer to a plate, set aside.
Step 3: Sauté the Vegetables
✔ In the same skillet, cook mushrooms for 3–4 minutes, then add asparagus & garlic, sauté 3 more minutes.
Step 4: Prepare the Creamy Sauce
✔ Reduce heat to low, pour in heavy cream & chicken broth, stir to combine. ✔ Add Parmesan, simmer 3–4 minutes until slightly thickened. ✔ If too thick, stir in reserved pasta water.
Step 5: Combine Everything
✔ Return chicken & pasta to the pan, toss until well-coated. ✔ Cook 2 more minutes for flavors to meld.
Step 6: Garnish & Serve
✔ Remove from heat, garnish with fresh parsley. ✔ Serve hot with extra Parmesan on top.
