Directions:

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until soft and fragrant (about 3-4 minutes).

  2. Add Vegetables & Apple: Stir in the carrots, apple, and pumpkin. Cook for 5 minutes, stirring occasionally.
