Ingredients:
- 1 lb navy beans (soaked overnight)
- 12 cups water
- 2–3 cups leftover ham chunks or ham hock
- 2 bay leaves
- 2 cups chopped onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 potato, peeled and chopped
- 2 cloves garlic, chopped
- 3–4 dashes Louisiana hot sauce
- Salt and freshly ground pepper (to taste)
- 1/4 cup chopped fresh parsley
