Instructions:
- Prepare the Pork:
- Preheat oven to 375°F (190°C).
- Rub the pork loin with olive oil, salt, pepper, garlic powder, onion powder, and thyme.
- Place it in a roasting pan.
- Make the Glaze:
- In a saucepan over medium heat, combine cranberry sauce, honey, balsamic vinegar, minced garlic, Dijon mustard, and cinnamon.
- Simmer for 5 minutes until slightly thickened.
- Roast the Pork:
- Brush the pork loin with some of the glaze.
- Roast uncovered for 50-60 minutes, basting with more glaze every 15-20 minutes.
- Add dried cranberries and pearl onions to the pan during the last 20 minutes.
- Check Doneness:
- Use a meat thermometer; the internal temperature should reach 145°F (63°C).
- Let the pork rest for 10 minutes before slicing.
