Instructions:

  1. Prep the Ingredients:

    • Cut all vegetables and chicken into thin, even strips for quick and even cooking.

  2. Cook the Chicken:

    • Heat 1 tbsp olive oil in a large pan or wok over medium-high heat.

    • Add the chicken strips, season with salt and pepper, and stir-fry for 5–6 minutes until fully cooked. Remove and set aside.

  3. Stir-Fry the Vegetables:

    • In the same pan, add the remaining oil.

    • Sauté the garlic and onion for 1–2 minutes until fragrant.

    • Add carrots and stir-fry for 2–3 minutes.

    • Toss in the bell peppers and zucchini, cooking for another 3–4 minutes until tender but still crisp.

  4. Combine & Season:

    • Return the chicken to the pan.

    • Pour in the soy sauce and stir everything together. Cook for another 1–2 minutes.

    • Adjust seasoning if needed.

  5. Serve:

    • Garnish with sesame seeds (if using).

    • Enjoy hot over steamed rice, noodles, or on its own!

Tip: For extra flavor, add a splash of oyster sauce, ginger, or chili flakes.
