Instructions
1. Prepare the Chicken
- Pound the chicken (if using a breast) to an even thickness (about ½ inch) for even cooking.
- Set up a breading station:
- Bowl 1: Flour mixed with garlic powder, salt, and pepper.
- Bowl 2: Beaten egg.
- Bowl 3: Breadcrumbs mixed with Parmesan and Italian seasoning.
- Dredge the chicken:
- Coat each piece in flour, shaking off excess.
- Dip in egg, letting excess drip off.
- Press into breadcrumb mixture until fully coated.
2. Cook the Chicken
- Heat olive oil in a skillet over medium heat.
- Cook chicken for 3-4 minutes per side until golden and cooked through (internal temp 165°F).
- Transfer to a paper towel-lined plate.
3. Assemble the Sandwich
- Butter one side of each bread slice.
- On the unbuttered side of two slices:
- Spread 1 tbsp marinara sauce each.
- Add a layer of shredded mozzarella.
- Place the breaded chicken on top.
- Sprinkle more mozzarella and Parmesan on the chicken.
- Add another drizzle of marinara if desired.
- Top with the remaining bread slices (buttered side out).
4. Grill the Sandwich
- Heat a clean skillet or griddle over medium-low heat.
- Place sandwiches in the pan and cook for 3-4 minutes per side, pressing lightly with a spatula, until golden and cheese is melted.
- Optional: Cover with a lid for the last minute to help melt the cheese faster.
5. Serve
- Slice in half and serve with extra warm marinara sauce for dipping.
- Garnish with fresh basil or parsley if desired.

- For extra crispiness, toast the bread in the pan before assembling.
- Shortcut: Use leftover breaded chicken or store-bought chicken cutlets.
