Chicken Bacon Gnocchi Soup

Instructions

Step 1: Cook the Bacon

✔ In a soup pot over medium-high heat, cook bacon until crispy (~10 minutes). ✔ Transfer to a paper towel-lined plate, leaving 2 tbsp bacon fat in the pot.

Step 2: Sauté Aromatics

✔ Add onion, cook 4–5 minutes until softened. ✔ Stir in garlic, cook 1 more minute until fragrant.

Step 3: Build the Soup

✔ Pour in chicken broth, cream, Italian seasoning, gnocchi, and most of the bacon (reserve some for garnish). ✔ Stir well, scraping up any browned bits from the bottom. ✔ Bring to a boil, then reduce heat to a gentle simmer. ✔ Cover slightly ajar, cook 15 minutes, stirring often.

Step 4: Add Chicken & Spinach

✔ Stir in shredded chicken & spinach, cook until warmed through. ✔ Season with salt & pepper to taste.

Step 5: Serve & Enjoy!

✔ Ladle into bowls, top with reserved bacon. ✔ Serve hot with crusty bread!

Tips & Variations

Make it spicier – Add red pepper flakes. ✔ Swap spinach for kale – Adds a heartier texture. ✔ Use fresh gnocchi – Cooks faster than shelf-stable.
