Directions
Step 1: Cook the Chicken
- Place the whole chicken in a large stockpot or Dutch oven.
- Cover the chicken with salted water (about 1-2 tablespoons of salt, depending on your taste).
- Bring the water to a boil, then reduce the heat to a simmer. Let the chicken cook for about 45 minutes to 1 hour, or until it is fully cooked and tender.
- Once the chicken is cooked, remove it from the pot and set it aside to cool slightly. Reserve the chicken broth in the pot for later use.
- Remove the meat from the bones, shred it into bite-sized pieces, and keep it warm.
Step 2: Prepare the Dumpling Dough
- In a large mixing bowl, sift together 2 cups of flour and 1 teaspoon of baking powder.
- Make a well in the center of the flour mixture.
- Pour 1 cup of the hot chicken broth (reserved from cooking the chicken) into the well.
- Mix the broth into the flour first with a fork, then use your fingers to combine until a shaggy dough forms.
- Add the egg to the dough and mix well until fully incorporated.
Step 3: Knead and Shape the Dumplings
- Lightly flour a clean surface and turn the dough out onto it.
- Knead the dough for about 30 seconds to 1 minute, until it becomes smooth.
- Divide the dough into 4 or 5 equal parts.
- Roll each piece of dough as thin as possible (about 1/8 inch thick).
- Cut the rolled dough into strips about 1 1/2 to 2 inches wide, then break or cut the strips into 2-inch-long pieces.
Step 4: Cook the Dumplings
- Bring the reserved chicken broth back to a boil in the stockpot or Dutch oven.
- Drop the dumpling pieces into the boiling broth, stirring gently to prevent sticking.
- Reduce the heat to a simmer and cook the dumplings for 10 to 15 minutes, or until they are cooked through and tender.
Step 5: Serve
- Add the shredded chicken back into the pot with the dumplings and broth.
- Stir gently to combine and heat the chicken through.
- Serve hot and enjoy!
