Cheesy Vegetable Fritters

Instructions

1️⃣ Prepare the veggies

  • In a large bowl, mix the grated carrot, chopped onion, bell pepper, and parsley (if using).

2️⃣ Add cheese & eggs

  • Stir in the shredded cheese.

  • Crack in the eggs and mix well to combine.

3️⃣ Mix in dry ingredients

  • Add the flour, salt, and pepper. Stir until a thick batter forms. If it’s too dry, add 1–2 tbsp of water.

4️⃣ Heat the oil

  • Heat oil in a skillet over medium heat.

5️⃣ Fry the fritters

  • Scoop about 2 tbsp of batter per fritter into the pan. Flatten slightly with a spatula.

  • Cook for 2–3 minutes per side, until golden and crispy.

6️⃣ Drain & serve

  • Transfer to a paper towel-lined plate to drain excess oil.

  • Serve warm with sour cream, yogurt, or your favorite dip!
