Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Prepare potatoes: Parboil or microwave diced potatoes for 5-7 minutes until slightly tender (but not fully cooked). Drain and set aside.

  3. Cook bacon: In a skillet, cook bacon until crispy, then drain and crumble.

  4. Layer tortillas & filling:

    • Place 3 tortillas in the baking dish, overlapping slightly to cover the bottom.

    • Spread half the potatoes, half the bacon, and half the cheese over the tortillas.

    • Repeat with the remaining tortillas, potatoes, bacon, and cheese (reserve a little cheese for topping).

  5. Make the egg mixture: In a bowl, whisk eggs, milk, sour cream, garlic powder, onion powder, smoked paprika, salt, and pepper. Pour evenly over the layered tortillas.

  6. Top with remaining cheese and a sprinkle of smoked paprika (if using).

  7. Bake for 30-35 minutes, until the center is set and the top is golden and bubbly.

  8. Garnish with green onions, let cool for 5 minutes, then slice and serve!
