Instructions:

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Prepare potatoes: Parboil or microwave diced potatoes for 5-7 minutes until slightly tender (but not fully cooked). Drain and set aside.

Cook bacon: In a skillet, cook bacon until crispy, then drain and crumble.

Layer tortillas & filling:

Place 3 tortillas in the baking dish, overlapping slightly to cover the bottom.

Spread half the potatoes, half the bacon, and half the cheese over the tortillas.

Repeat with the remaining tortillas, potatoes, bacon, and cheese (reserve a little cheese for topping).

Make the egg mixture: In a bowl, whisk eggs, milk, sour cream, garlic powder, onion powder, smoked paprika, salt, and pepper. Pour evenly over the layered tortillas.

Top with remaining cheese and a sprinkle of smoked paprika (if using).

Bake for 30-35 minutes, until the center is set and the top is golden and bubbly.
