Instructions:

1️⃣ Prepare the Dough:

  • In a bowl, combine the cooked rice, salt, pepper, 2 eggs, and chopped parsley. Mix well for about 1 minute.

  • Add the grated mozzarella, grated pepperoni, whole wheat flour, and baking powder.

  • Use your hands to mix until a firm dough forms.

2️⃣ Shape the Rice Balls:

  • Take a spoonful of dough and roll it into a ball (about 1-2 inches in size).

  • Optional: Flatten the dough in your palm, place a mozzarella cube in the center, then reshape into a ball.

3️⃣ Breading:

  • Roll each ball in flour, then dip in beaten eggs, and finally coat with breadcrumbs.

4️⃣ Fry to Perfection:

  • Heat oil in a deep pan over medium heat.

  • Fry the rice balls in batches until golden brown (about 2-3 minutes).

  • Drain on paper towels to remove excess oil.
