Instructions

1️⃣ Preheat oven to 400°F (200°C), grease a mini muffin pan. 2️⃣ Mix ingredients – In a bowl, combine mashed potatoes, egg, cheddar, chives, flour, garlic powder, salt & pepper. 3️⃣ Shape balls – Roll into 1-inch balls, coat in grated Parmesan. 4️⃣ Bake for 15–20 minutes until golden brown & crispy. 5️⃣ Cool slightly & serve warm.
