Instructions:

  1. Preheat Oven:
    • Heat oven to 375°F (190°C).
    • Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Prepare the Meatloaf Mixture:
    • In a large bowl, combine ground beef, breadcrumbs, ½ cup mozzarella, Parmesan, eggs, onion, garlic, ½ cup marinara sauce, Italian seasoning, salt, and pepper.
    • Mix gently with hands until just combined—avoid overmixing for a tender texture.
  3. Shape & Bake:
    • Transfer mixture to the prepared pan and shape into a loaf.
    • Spread the remaining ½ cup marinara sauce over the top.
    • Bake for 45 minutes.
  4. Add Cheese & Finish Baking:
    • Remove from oven and sprinkle the remaining ½ cup mozzarella on top.
    • Return to oven and bake for 10-15 more minutes, or until the cheese is golden and the internal temperature reaches 160°F (70°C).
  5. Rest & Serve:
    • Let the meatloaf rest for 5-10 minutes before slicing.
    • Garnish with fresh parsley and serve with extra marinara sauce if desired.

Tips & Variations:

  • Meat Blend: Try a mix of beef, pork, and veal for extra richness.
  • Stuffed Version: For a gooey center, press half the meat mixture into the pan, add a layer of mozzarella or provolone, then top with the remaining meat.
  • Make Ahead: Assemble the meatloaf, cover, and refrigerate for up to 24 hours before baking.

Enjoy this juicy, cheesy, and flavorful Italian-style meatloaf—perfect for a comforting family dinner! 🧀
